The ingredient: target specification

Quick answer

We are developing a marine collagen ingredient from the skeleton of wild-caught North Atlantic cod, in two formats: hydrolysed collagen peptides and native (undenatured) Type II. The figures below are development targets, not a certificate of analysis.

Updated

Two formats from one skeleton

Fish skeleton contains bone, which is rich in Type I collagen, and cartilage, which contains Type II. We use the same raw material for two ingredients with different doses and uses.

Formats in development
FormatWhat it isTypical useStatus
Hydrolysed collagen peptidesCollagen cut by enzymes into short peptides, target 0.5 to 2 kDaGram-dose formats: powders, sticks, drinks, gummiesLab trials, pilot mid 2027
Native Type II powderType II collagen kept in its natural, undenatured form by a low-temperature processMilligram-dose formats: capsules, tabletsIn development
Bone mineral fractionCalcium and phosphorus recovered when the bone is demineralisedMineral co-ingredientIn evaluation

Target specification: hydrolysed peptides

Mineral fraction and collagen mineral blend

Demineralisation dissolves the bone mineral, which is mostly calcium and phosphorus. We plan to purify it as a separate sidestream fraction rather than discard it. It can be supplied three ways: collagen peptides alone, the mineral fraction alone, or a collagen mineral blend from one source. Separate ingredients leave you free to set your own ratio in the formulation.

The mineral fraction is in development. Its soluble form, purity and contaminant specification will be set in our pilot trials, and the regulatory route for fish bone minerals is being confirmed.

How it is made, in brief

  1. Cleaning and pre-treatment to remove fat and non-collagen protein.
  2. Demineralisation to free the collagen from the bone mineral, which is kept as its own fraction.
  3. Enzymatic hydrolysis to the target peptide size (peptides only).
  4. Purification and filtration for a neutral taste, odour and colour.
  5. Drying to a fine powder.

Process parameters are being set in lab trials in Denmark and will be fixed in pilot trials planned for mid 2027. They may change.
